Ingredients

  1. 2 cupsuncooked short grain rice
  2. 1butternut squash cubed
  3. 2gala apples cubed
  4. 1red onion sliced
  5. 2 tablespoonsherbs de Provence
  6. Salt
  7. Pepper
  8. 2 tablespoonsolive oil
  9. 1 bagfresh spinach
  10. Dressing
  11. 1/4 cuptahini
  12. 1/4 cupolive oil
  13. 1/4 cupapple cider vinegar
  14. 1 tablespoonherbs de Provence

Cooking Instructions

    Preheat oven to 425 degrees

    Cook rice in instant pot or rice cooker

  3. 3

    Combine butternut squash, apples, onions, 2 tablespoons herbs de Provence, salt, and pepper and bake until golden brown

  4. 4

    Combine ingredients for dressing

  5. 5

    Mix the roasted vegetables and fresh spinach with the rice. Add the dressing and serve at room temperature
