Ingredients

  • 2 1/4 cupsall-purpose flour (about 280 grams)
  • 2 1/2 tablespoonstapioca starch (about 20 grams)
  • 1 3/4 ouncesfresh pandan leaves (about 50 grams)
  • 2/3 cupwhole milk (about 150 grams)
  • 1 1/2 tablespoonsheavy cream (about 20 grams)
  • 1 teaspooninstant yeast (about 4 grams)
  • 1/4 cupsugar (about 50 grams)
  • 1/2 teaspoonsalt (about 3 grams)
  • 1 tablespoonvegetable oil (about 15 grams)
  • 1/2egg white

Steps

    Wash the pandan leaves, cut them into small pieces, and blend with the milk in a blender. Strain to get 2/3 cup (about 150 grams) pandan milk.

    Mix all the ingredients with the pandan milk, then knead for about 20 minutes. Divide the dough into small portions and shape as desired. I made 7 pieces.

    Shape the buns as you like, then cover with plastic wrap and let them rest for about 1 hour.

    After resting, steam the buns. Bring water to a boil, place the buns in the steamer, and cover the lid with a towel. Steam over medium heat for about 10 minutes, then turn off the heat. Let the buns sit for 5 minutes before opening the lid. The buns will be soft, smooth, and fragrant—enjoy them hot!
