Okara Cup Cakes with Matcha and Cinnamon

I wanted to try making a rice flour mini cake recipe using a highly nutritious Okara.

These muffins are delicious when they are freshly baked, but I recommend them also after they're cold, because they become even more moist and the flavors settle in.
Try to bake it as soon as possible after adding the baking powder.

Ingredients

3 servings
  • 50 gramsFresh okara
  • 10 grams★Rice flour
  • 1 dash★Salt
  • 10 grams★Sugar (made with beet sugar)
  • 1/2 tsp★ Matcha
  • 1/4 tsp★Cinnamon
  • 60 gramsSoy milk (or milk)
  • 1/2 tspBaking powder
  • Additional ingredients (optional)
  • 1Boiled azuki beans or Amanatto

Steps

  1. 1

    Preheat the oven to 170℃. (Line the muffin cups with heat resistant paper molds so that it will be easier to take out from the muffin cups.)

  2. 2

    Put all ★ ingredients in a bowl in order on the ingredients list and mix well using a spoon. Then add soy milk and continue mixing.

  3. 3

    Sprinkle in baking powder and mix well. Pour the mixture in the muffin cups. Top with the additional ingredients if you like.

  4. 4

    Bake in the oven for 20 minutes. Let it sit to slightly cool, chill in the refrigerator and then it is ready (Chilling the muffins is optional)
