Mix the flour with the oil so that the flour is well oiled.

Add the rest of the ingredients.

Separate the dough into 10 small balls.

Let the dough rest.

About half an hour later take each small ball, stretch it a bit using your hands, put a bit of anthotyro in the center and pinch the edges together.

Place it on your working surface with the closed side at the bottom. Lightly press on top and roll it out to the size of a small dessert plate.

Put a bit of oil in the pan each time and fry the sfakianopites one by one. If the dough that we rolled out has bubbles -which means that it has air- poke with a toothpick to release the air.

When they are fried, serve drizzled with honey or salted kefalotyri.
