I usually make fajitas but I thought I’d give enchiladas a go. It turned out to be simpler than I thought.

I usually make fajitas but I thought I’d give enchiladas a go. It turned out to be simpler than I thought.
Cooking Instructions

Preheat the oven to 180

Finely dice the onion and soften in a pan on a medium heat
- 3
Add the beef mince, paprika, cumin and chilli flakes. Stir and brown the mince

Mix the stock and tomato paste. Add to the pan. Reduce
- 5
To make the salsa mix chopped tomatoes, spring onions, coriander with oil and season with salt and pepper
- 6
Make the guacamole (see linked recipe)

Fill the tortillas with the beef like this
- 8
Cover in grated cheese and cook in the oven for 5 - 10 mins
- 9
Serve topped with salsa and guacamole
