Ros omelette, also known as Ras omelette, is a snack and street food in Goan cuisine. Ros means "gravy" in Konkani. It is a spicy gravy, consisting of onions, curry leaves, black mustard seeds, scraped coconut and spices. Ingredients such as mushrooms or cauliflower are also commonly used. The omelette contains eggs, herbs, finely chopped green chili peppers, onions (or shallots), finely chopped fresh green coriander and salt, with many variations. The ros is cooked separately. The hot ros is poured over the freshly fried omelette and served with Goan bread (Pav).

Add 1 tablespoon (approx.) Refined Oil in pan and heat

Add 1 medium Onion, chopped and fry till translucent

Add 6 Garlic pieces and one 1/2 inch Ginger piece

Add 1 Green Cardamom

Add 3 Cinnamon sticks, 1 inch size each

Add 1/2 teaspoon whole Black Pepper

Add 1 teaspoon Cumin seed

Add 1 teaspoon Coriander

Add 6 whole Kashmiri Red Chili

Add 1/2 cup desiccated Coconut and mix well

Add 1 medium size chopped Tomato and stir

Spice mixture is ready. Cool down to room temperature

Transfer spice mixture to grinder for grinding

Add 1/2 teaspoon Salt

Add 1/2 teaspoon Turmeric powder and grind

Next prepare gravy. Add 1 teaspoon Refined Oil in pan

Add 1 tablespoon chopped Onion and fry till translucent

Add spice paste and stir

Add Water as per requirement and mix well

Next prepare Omelette. Crack 3 Eggs in mixing bowl

Add 1/4th teaspoon Salt in Egg

Add 1/2 teaspoon Kashmiri Red Chili powder

Add 2 tablespoon (Approx.) Refined Oil in pan

Add whipped Egg in pan and fry

Fold the Omelette

Serve the Omelette with gravy. Garnish with chopped Onion, Tomato, Coriander leaves and Lime
