In a pan, heat some extra virgin olive oil and sauté a large garlic clove, a bit of parsley, and the mushrooms.

Separately, prepare a vegetable broth or use bouillon; I prefer vegetable broth.

Add the rice to the mushrooms, stir, then add a ladle of broth at a time, stirring until the rice is cooked. Add salt, pepper, parsley, and more broth as needed until the risotto is creamy. Enjoy!
