Combine the marinade ingredients in a bowl.

Add the pork and leave to marinate for 15 minutes.

Slice the cabbage very thinly using a mandolin, then divide evenly between four serving plates and place a lemon quarter alongside.

Heat the oil in a frying pan on a high heat and add the drained pork. Sauté for 2 - 3 minutes, turning the meat to brown both sides.

Be careful, as the pork can easily burn - if the temperature is too hot, reduce the heat to medium.

Add the marinade and cook the pork in the marinate until it is slightly caramelised and coats the pork.

Arrange the pork alongside the cabbage. Drizzle the pork and cabbage with marinade. Squeeze over the lemon, if you like, then serve immediately.
