Ingredients

  • 1 bunchlong beans/snake beans/yardlong beans (400g)
  • 2shallots - roughly chopped
  • 2bird eye chilies (adjust to your liking
  • 2 tbspasian dried anchovies or use dried shrimps
  • 1 tbspdark soy sauce
  • 1 tbspOYSTER SAUCE or to taste
  • 1 tbspsugar
  • 💡 VARIATIONS
  • 1. Replace sugar with sweet soy sauce and adjust the amount of dark soy sauce
  • 2. If you don't have dried anchovies or dried shrimps, use diced chicken or you can omit it altogether
  • 3. Replace oyster sauce with chicken seasoning powder or chicken bouillon to taste

Steps

  1. 1

    Clean & cut long beans. Next, for sambal, add shallots, dried anchovies & chillies to the mortar. Use the pestle to crush and mix until you have a rough texture mixture of sambal.

    Heat 3-4 tbsp of oil in a wok. Add the above sambal to hot oil. Sauté until aromatic and ingredients are slightly golden.

  3. 3

    Add the beans. Cook over medium low heat for 3-5 minutes until beans are wilted. Add 1/4 cup of water to continue cooking the beans. Add seasonings- dark soy sauce, oyster sauce & sugar. Continue to cook until beans are soft and liquid is almost completely gone. Taste and adjust seasonings accordingly. Serve immediately over rice.
