A little creativity can turn leftover ingredients into a surprising dish. I had some sandwich bread that I cut in half and toasted in the oven. I spread some leftover ricotta mixed with a bit of olive oil and pepper. I added smoked salmon and mint pesto I made the other day with extra virgin olive oil, Grana Padano cheese, and almonds. And there you have it, dinner is served.

  • Halfa container of ricotta
  • as neededExtra virgin olive oil,
  • Ground black pepper
  • 6 slicesSandwich bread
  • Mint pesto
  • Salt

    Remove the crust from the sandwich bread, cut in half, and toast in the oven.

    Mix the ricotta into a creamy texture with a tablespoon of olive oil and ground black pepper.

  3. 3

    Spread the ricotta cream on the toasted bread, add the smoked salmon, and finish with the mint pesto.
