Ingredients

Serves 4 (1 bun per person)
  • For the Dough:
  • 1 cup bread flour (about 150 grams)
  • 1/3 cupwarm water (about 88 grams, 100°F/38°C)
  • 1 teaspoonyeast (about 5 grams)
  • 1 teaspoonsugar (about 5 grams)
  • 1/3 teaspoonsalt (about 2 grams)
  • 1 1/2 teaspoonsoil (about 6 grams)
  • For the Filling:
  • 4 oz ground beef or pork (about 120 grams)
  • 1 tablespoonrice wine (about 12 grams)
  • 1 tablespoonwater (about 12 grams)
  • 1/3 teaspoonsalt (about 2 grams)
  • 1 1/2 teaspoonssugar (about 6 grams)
  • 1 1/2 teaspoonssesame oil (about 6 grams)
  • 1/3 cupchopped green onions (about 50 grams)
  • 1 tablespoonKorean chili paste (gochujang) (about 20 grams)
  • 4 cubescheese
  • For the Topping:
  • 1egg white
  • 1 1/2 tablespoonswhite sesame seeds (about 20 grams)

Steps

    Combine the yeast, warm water, sugar, and oil. Let sit for 1 minute.

    Add the bread flour and salt.

    Knead into a smooth dough. Place in a lightly oiled bowl, spray the surface with oil, cover with plastic wrap, and let rise for 2 hours or until doubled in size.

    Place the ground meat in a zip-top bag. Add rice wine, water, salt, Korean chili paste, and sugar. Mix well.

    Add chopped green onions and sesame oil. Mix until combined and set aside.

    Gently press the air out of the dough, divide into 4 pieces, and shape into balls. Cover with plastic wrap and let rest for 15 minutes.

    Roll each ball flat with a rolling pin. Place some meat filling in the center, top with a cube of cheese, gather the edges, and pinch to seal. Shape into a ball.

    Brush the top half of each bun with egg white.

    Roll the brushed side in white sesame seeds.

    Preheat the oven to 375°F (190°C). Bake for 25 minutes.

    Remove from the oven.
