Ingredients

  1. 100 gmFor Kofta : crumbled paneer
  2. 2boiled grated potato (medium)
  3. 1 tbspchopped cashews
  4. 1 tbspraisians
  5. 1 tspgreen chilli paste
  6. 1 tspginger paste
  7. 2 tbspcornstarch
  8. 1/4 tspsalt
  9. 1/4 tspred chilli powder
  10. 1 tbspchopped coriander leaves
  11. 1 tspdesi ghee
  12. 1/4 cupFor Gravy (curry) : cashews paste
  13. 1 cuptomato puree
  14. 1 inch chopped ginger
  15. 1-2chopped green chilli
  16. 1/4 cupfresh malai/cream
  17. 2 tbspwhisk curd
  18. 1 tspcumin seeds
  19. 1black cardamom
  20. 1 inch cinnamon
  21. 2bay leaf
  22. 2cloves
  23. 5whole black pepper
  24. 1 tspor to taste salt
  25. 1 tspKashmiri lal mirch
  26. 2 tspcoriander powder
  27. 1/4 tspturmeric powder
  28. 1/4 tspgaram masala
  29. 1/4 tspsugar
  30. 2 tbspchopped coriander leaves
  31. 1 tspkasuri methi
  32. 1 cupwater

Cooking Instructions

    For Kofta : Take a plate add paneer make smooth with palm for 2-4 minutes.

    Add cornstarch,grated potato,, salt, red chilli powder,coriander leaves, ginger n green chilli paste mix well and make smooth dough.

    Divide in equal portions and make small balls. Take one paneer ball spread on palm and make cavity. Put few cashews and raisian in it. Close the edges. Same process apply to make all kofta. Now Coated with cornstarch. Keep aside.

    On simmer preheated the Appam pan. Greased all cavity and placed all kofta in it one by one. Grease all kofta. Cover the lid. Roast 2 minutes on simmer.

    Now flipped and cook for a minute until turns into golden brown. Switch off the flame. Transfer into plate.

    For Gravy : On medium flame heat desi ghee in a wok. Add all whole spices one by one when it crackled add ginger and green chilli saute 10 seconds.

    Add tomato puree saute. Now add salt, red chilli powder, coriander powder, turmeric powder, sugar and kasuri methi mix well and cooked until ghee remove around the sides. Stir occasionally.

    Now add cashews paste and water mix nicely. Cook for 1-2 minutes. Add whisk curd gratudly on simmer. Stir continuously.

    Now add fresh cream mix well and cooked for a minute. Add gram masala and coriander leaves. Turn off the flame.

    Add Kofta. Mix smoothly. Now Shahi Malai Kofta Curry is ready to serve. Transfer into serving bowl. Serve with naan,tandoori roti etc. Enjoy!!
