Preheat the oven to 180°C.

Combine the Plant Butter and Cocoa Powder in a large bowl. Blooming Cocoa Powder in the melted Plant Butter, will draw out its rich flavor.

Mix in the Sugar, Egg, Vanilla Essence and Coffee until combined.

With a spatula mix in the Gluten-free Flour and salt. It is a thick batter.

Fold the Chocolate into the batter.

Place batter to cupcake holder and smooth to the edges.

Bake for 20 minutes until center is set, it will still be gooey.

Place half a marshmallow on each cupcake. Place under the grill and grill until the Marshmallows start to brown.
