Steps

Wash mushrooms very nicely. Assemble all ingredients.

Put the mushrooms in boiling water by adding salt, lower flame, cover and simmer for 3-4 minutes only. Then switch off flame and keep under cover for few more minutes so that they get soft. Keep mushrooms in a colander to drain excess water.

In a mixing bowl add all dry ingredients like maida + corn flour + salt + red chilli powder + turmeric + garam masala, mix well, break egg and mix nicely into a paste.

Now add ginger garlic paste, mix well, if required add very slight water as we want a thick batter so that mushrooms get coated well.

Heat pan medium, add butter, dip mushrooms in batter nicely and drop, shallow fry under medium flame till golden brown. Keep aside.

In moderately heated pan, add oil, add garlic and sauté for few seconds, add ginger paste + onion + spring onion + chilli and sauté for 1-2 minutes, then add capsicum + pepper powder and sauté for few minutes till capsicum turns soft yet crunchy.

Now add all sauce one after another + vinegar + salt, mix well and cook for 2 minutes under medium flame. Now add 1/2 cup water and cook for 2-3 minutes, lastly add mushroom fritters and mix well so that fritters coats well with gravy. In this stage corn flour slurry can be added if want gravy.

Garnish with spring onion greens, Mushroom Manchurian is ready to serve.
