So many summer tomatoes and I am developing a classic recipe to deal with the mass of red (and green) tomatoes I have

Ingredients

2 hours 30 minutes
12 servings
  1. 4 1/2 poundstomatos, roughy chopped
  2. 1medium red onion, diced
  3. 1/4 cupbasil packed tight
  4. 3 clovesgarlic, chopped
  5. 1/4 cupolive oil
  6. 1 1/2 teaspoonssalt
  7. 2dried habaneros, crushed
  8. 1/4 teaspoonground pepper

Cooking Instructions

2 hours 30 minutes
  1. 1

    Add oil to large pot and when hot add onions

  2. 2

    Add everything else and bring to a boil, then reduce to a simmer

  3. 3

    I simmer covered for like an hour, then uncovered for another hour or two to simmer down a bit. I usually gage the thickness on when it is done.
