Pear, Gorgonzola and Red Onion Pizza

Sauté onion at medium temperature in 1 tablespoon butter until caramelized. Set aside.

Sauté pear slices at low temperature in 1 tablespoon butter until softer but not mushy. Set aside.

In a small bowl mix honey, olive oil, vinegar, thyme, salt and pepper.

Prepare pizza dough. Brush surface with honey mixture. Bake in a preheated oven at 475F on stone for 1 minute. Remove.

Distribute onions, then Fontina, then pears, then Gorgonzola. Bake until desired color is achieve (8 minutes).

Finish with walnuts and arugula.
