Fish with chargrilled garlic tomatoes and lemon olive oil dressing

This is an amalgamation of flavours! I got inspiration from a Pinterest recipe that called for basil and butter. As we are lactose intolerant, I substituted it at the end with extra virgin olive oil instead. So delicious and all done in a single pan :) Served them on a bed of spring asparagus

Pan-fry fish fillets till well-cooked. Set aside.

Heat olive oil in the same pan. Stir-fry garlic and cherry tomatoes till tomatoes caramelized and burst. Add salt and pepper.

Add in broth and bring to a boil. Then add in lemon juice and seasonings. Bring fish back in to pan. Drizzle with extra virgin olive oil. Topped with parsley and mix well.
