Ingredients

  1. 7 ozchicken breast (200 grams)
  2. 1 1/4 cupscoconut milk (300 milliliters)
  3. 10oyster mushrooms
  4. 8 slicesgalangal
  5. 8fresh chili peppers
  6. 6kaffir lime leaves
  7. 2 stalkslemongrass
  8. 2cilantro roots
  9. 1 stalkculantro (or substitute with extra cilantro if unavailable)
  10. 2 tablespoonsfish sauce (30 milliliters)
  11. 1 tablespoongranulated sugar (12 grams)
  12. 3 tablespoonslime juice (45 milliliters)
  13. 3/4 cupchicken broth (200 milliliters)

Steps

  1. 1

    Bring the coconut milk to a boil over medium heat.

  2. 2

    Add the chicken broth to the pot and stir to combine with the coconut milk. Add the galangal, lemongrass, kaffir lime leaves, chili peppers, culantro, and cilantro roots.

  3. 3

    Add the sliced chicken breast and season with fish sauce and sugar.

  4. 4

    Add the mushrooms last. Turn off the heat, then stir in the lime juice.
