Poor man's potatoes

The Spanish "patatas a lo pobre" is a very flavorful easy side dish that I think everyone should know. I've added my own twists and tweaks to this and you can too. So here's how I made it.

The Spanish "patatas a lo pobre" is a very flavorful easy side dish that I think everyone should know. I've added my own twists and tweaks to this and you can too. So here's how I made it.

Add the oil to a medium hot frying pan, add the onion and the peppers with a pinch of salt. Cook until onion is slightly softened and translucent. Add the garlic and cook for a minute more.

Add the half centimetre disc width potatoes and add all the seasoning and add the chicken/veg/beef broth. Mix well.
Lower the temperature to medium to medium/low, cover with a lid and cook for 10 minutes without touching it. After 10 minutes, mix, cover again and cook for another 10-15 minutes. And finito! You are done enoy your dish with anything you like.
