Cooking Instructions

Preheat oven to 220C degrees. Steam for 20' the Potato in a double pan. Remove, transfer into a bowl. Add salt,1/4 cup milk, 1/4 cup double Cream. With mashed spoon, mash them all together. Set aside. Steam the Pumpkin Butternut for 15'. Remove, then cut in a little chunk piece then mash roughly. Set aside.

Preheat oven to 220C degrees. In a pot put water, add carrots, the green beans, peas, celery and cook for 15'. Drain. Transfer the cooked veges into a glass bowl, add the raw capsicum & celery and with a big spoon mix them gently together.

Let it cool. Set aside. Now let's focus on how to fill the thawed Flaky Puff Pastry.

On a working table put the Pastry sheet: with a big spoon scoop the mashed Potato & place on top base of the Pastry,spread to a thin layer, then on top add a thin layer of Pumpkin Butternut, then on top put a layer of Ham pieces spreading evenly,then spread a layer of cheese & sprinkle a few vege mixture. Lastly cover with the remaining half Pastry.Press to seal with fingers along the 3 sides.With fork prick all over top pastry for the steam comes out.

In a small bowl beat the egg with a fork, then add 1 tbs Milk. Dip a pastry brush into the egg wash, smear on top of the pastry. Then put the Pasties 20' in the freezer.Then with a spatula to lift out the Pasties onto the oven tray (the base covered by baking paper), and put the tray in the middle of the oven, bake for 15'-20' or until golden brown.Remove and serve.To serve with 1Tbs Tomato Sauce on each individual.After finish, to refresh with a Red Purple Wine Grapes which are in season 😍🍾🍷

My grandma grew up in Gold Country here in CA where pasties are as much a part of local culture as they are in Cornwall.This isn't really your standard pastie though. I strayed from traditional recipes in that I used a little sourdough starter to improve the flavor of the crust. And the spices in the filling are probably not standard either. But I'd say you can fill these guys with just about any thick, stew-like substance you like. Deer camp special! This is a traditional hand-held, hearty dish common to northern Michigan. The key is in the flaky crust and care should be made to keep crust ingredients as cool as possible before cooking to make it as flaky as possible. Filling can be made from any meat and vegetable, but, traditionally it includes beef, potatoes, rutabaga, onion, and carrots seasoned with salt and pepper. This recipe includes cheese because well, who doesn't love cheese? And I dropped the carrots so feel free to add those if you choose. Also, I added ground pork because I feel it adds a layer of flavor. Don't be afraid to get creative because it will all turn out great with this recipe. It's also great for making plenty in advance, wrap with aluminum foil, and freeze. Simply remove from freezer, keep in foil, and throw in oven at 350° for 1 - 1 1/2 hours for a perfect, complete meal. Can be topped with gravy or ate cold with ketchup while playing Euchre for the quintessential Yooper deer camp experience. Prep time can be upwards of an hour dicing vegetables and ideally 3 hour refrig time so when your planning from start to finish you should allow 6 hours, but can be made as quick as 4 hours.
