Wash and cut bhindi in 1 inch lengthwise, also cut onions.

Heat 2 tbsp oil in a skillet and fry bhindi for 5 minutes, then keep aside.

Crush coriander, cumin and carom seeds.

Heat 2 tbsp oil and put crushed masalas.

Add chopped onion and fry till pink in colour.

Add garlic paste, chopped tomato, turmeric powder, chilli powder and garam masala powder.

Mix well and cook till oil starts separate.

Add fried bhindi and kasuri methi, mix gently.

Add dry mango powder and 1/2 cup water, cook for another 5 minutes.

Bhindi do pyaza is ready.
