Ingredients

  • 1 cupyellow Moong Dal (soaked for 4 hours)
  • 1/4 cupchopped methi leaves
  • 2 cupmaida - more or less as needed
  • 1/4 tspHing
  • 1/2 tspTurmeric powder
  • 1 tspRed chilli powder
  • 1/2 tspJeera
  • 1/2 tspWhite sesame seeds
  • Salt to taste
  • Oil is required to deep fry mathri
  • 4 tspMaida
  • 2 tspGhee
  • 2 tspOil

    Drain and grind moong dal in a mixie jar, and make a smooth paste. Transfer in a mixing bowl.

    Add maida, methi leaves, and all masala into moong dal paste. Knead a dough. Cover it. Rest it for 10 minutes

    Add ghee and oil in maida to make smooth paste to apply on chapati.

    Drizzle oil to make smooth dough. Now make equal size of ball. Roll all into large chapatis.

    Apply generously maida - ghee paste on each chapati. Keep one on one to make layers. Roll tightly. Cut into small pieces to make small mathris.

    Press gently, and just roll horizontal and vertical only for twice. Roll all mathri in the same way.

    Heat oil in a frying pan. Fry mathri in batches on low to medium flame, until turns crispy and golden brown colour. When cools down completely - almost 2 hours, then store in an airtight container. Enjoy many days.
