I made this cake for a special event and the result was much appreciated! 😉

Let's start preparing the sponge cake, beat the eggs with the sugar for about 20 minutes.

After sifting the flour, add one spoonful at a time, to the whipped mixture, being careful not to dismantle everything, (this operation must be done by hand without an electric whisk).

Grease well and flour a pan and pour all the dough inside.
Bake the sponge cake for at least 45 minutes at about 160 ° preheated oven. - 4
Once the cake is removed from the oven, let it cool and start the preparation of the italian pastry cream.

I love to cook this cream in the microwave like I was taught in cooking school.
Starting with the yolk and the sugar, mixing well. - 6
Add the flour to the mixture and mix well.

Add the warm milk a little at a time, mix and add again, always stirring.

Once the milk has been added, add the vanilla and lemon zest, mix and place in the microwave for 60 seconds.

Mix well and put in the microwave for another 30 seconds and mix again, and repeat until the cream is completely thick.

After the preparation of the sponge cake and the cream, start the preparation of the sauce for the sponge cake.
It is a kind of syrup to wet the cake, to ensure that the cake is not too dry.

In a saucepan, pour the lemon juice, water and sugar, mix well and bring the mixture to a boil.

Let it boil for a few minutes, then turn it off and let it cool completely.
I recommend using a pastry brush to wet the surface of the cake.

Once all the ingredients are ready, let's start to assemble the cake!

Let's start by taking the sponge cake and cut it in half trying to have two equal discs.
Take the sauce for the sponge cake and start to wet it using the brush. - 15
Take the Italian cream pastry and put just enough on the disc previously wet with the syrup.

Close the cake with another disc (always well wet with the syrup).
Add the whipped cream on the cake (previously whipped) and start spreading it all over the cake making sure it is nice and smooth.

Add the crumbled meringues to the edges, and put the strawberries around the cake.

Add more crumbled meringues on the cake in the spaces in the whipped cream

Add a whole meringue to the center of the cake by inserting a little whipped cream and a strawberry for decoration.

Let it rest in the fridge for a few hours before serving and..
