Dahiwali Lauki curry / Bottle Gourd Curry with yoghurt

Dahiwali lauki curry is a delicious curry prepared using lauki / bottle gourd and yoghurt as the name suggests. It is a very easy and quick recipe which tastes absolutely delicious served with roti or rice.

Dahiwali lauki curry is a delicious curry prepared using lauki / bottle gourd and yoghurt as the name suggests. It is a very easy and quick recipe which tastes absolutely delicious served with roti or rice.

Wash and peel lauki. Cut it into circles or half circles of medium thickness. Heat two tbsp oil in a pan and arrange lauki pieces in it and cook it for 5 to 8 min until golden from both sides. If you have more pieces then repeat the process. Now take the pieces out on a plate.

In the same pan add another tbsp of oil along with the remaining oil and cumin. When it browns a bit, add bay leaf and hing to it. Now add chopped onion and saute it until light pink in colour. Add ginger, green chillies and garlic to it and cook it for a minute. Now add turmeric, red chilli powder, coriander cumin powder and salt to it. Add fried lauki pieces to it and mix everything well. Now add 1/2 to 3/ 4 cup water to it and cover and cook it until it becomes a bit soft.

Now add beaten yoghurt, kasuri methi and garam masala to it and mix everything well. Cook it on low heat and keep stirring so that the yoghurt does not split. Cook it on low heat for 5 minutes then add fresh cream and coriander leaves to it. Turn off the heat.

Serve dahiwali lauki curry along with roti or rice.
