Ingredients

3 hours.
4 servings
  • 11/2 cupbasmati rice (aged)
  • 1/2 kgchicken
  • 1/2 tsp biryani masala
  • 1large onion
  • as required green coriander leaves chopped
  • as required mint leaves chopped
  • 4 tbsp oil
  • 2 tbsp ghee clarified butter
  • 1/4 tsp saffron strands -soak in hot milk
  • 1/4 tsp Marinade- ginger garlic paste
  • 1/4 tsp turmeric powder
  • 1-2green chilli slit
  • 2/3 cupyogurt
  • 1 tbsp lemon juice
  • 1/2 tspred chilli powder
  • 11/2 tsp biryani masala powder
  • 1/4 tsp green cardamom powder
  • as per tasteSalt
  • Whole spices for rice -
  • 7 cupwater
  • as per tasteSalt
  • 1 tsp oil
  • 1bay leaf
  • 3 inchcinnemon piece
  • 6cloves
  • 4green cardemom
  • 1star anise
  • 1black cardemom
  • 2 strandsmace
  • 1/2 tsp caraway seeds optional shahi jeera

Steps

3 hours.
  1. 1

    Slice onions thinly seprate layers set aside. Heat oil in deep pan fry onions until golden brown remove set aside.

  2. 2

    Add yogurt salt turmericpowder red chilli powder biryani masala powder Cardemom powder green chilli ginger garlic paste lemon juice to a mixing bowl in chicken. Marinate for 2 hours to overnight in fridge.

  3. 3

    For rice -
    Wash and soak rice for 30min. Drain water set aside. Heat 6-7 cups water in pot add 1 tspoon oil whole spices salt boil add rice cook till 75% done. Do not make mushy.

  4. 4

    Transfer marinate chicken to heavy bottom pan add oil half fried onions mint leaves green coriander leaves biryani masala cooked ricepowder pour saffron milk all over.

  5. 5

    Add ghee cover pot with foil cover with tight and heavy lid. Place this over thick hot tawa cook for 20 min. on lowest flame cook for 15 min.

  6. 6

    Garnish with fresh green coriander leaves.
    Serve with raita.
