I am making these vadas with urad lentil powder but you can use urad whole lentil akso. I had taken 1 1/2 cup urad lentil powder but if you are using urad whole lentil then take 2 cups of lentil then clean, wadh and soak it in clean water for 4-5 hours and then grind it to a smooth paste with very less oil. The rest of the process will be the same as follows.

In a big bowl sift the urad lentil powder with baking soda and asafoetida. Then grind the garlic cloves along with green chillies and cumin seeds to a fine paste. Clean the mixer grinder adding some more water so that all the paste comes out and nothing is waste. Then add this paste to the lentil mix adding 3/4th to 1 cup water ensuring that the paste remain thick. Add little water at a time and mix so that the batter don't become runny.

Now start whisking it either by a spatula or by a whisk or by an electric hand blender in one direction. Don't beat it in both the directions else the air will not incorporate and batter will not get lighter. After beating for 15-20 minutes you will notice that it's becoming lighter and now it's more easy to whisk it. Test the doneness of the batter by taking water in a bowl then putting a small dollop of the batter in the water if it sinks the batter is not ready.

If it immediately comes up and starts floating then it's done. At this stage the batter will become very light and more than double in volume. I had added few nuts like almonds, cashews and rains to the batter and whisk it again to mix it well and this is totally optional. You can even make these vadas without the garlic, green chillies and cumin seeds mixture but this mix enhance the taste of the vadas. You can also make deep fry or shallow fry or steam vadas with this batter.

Now preheat the airfryer on baking mode at 160°C for 5 minutes then lightly brush the basket of the airfryer with oil and start dropping dollops in the airfryer just like we make the fritters. You can even make it in a vada shape. Now bake it on the same temprature for 15 minutes. If you want you can flip the vadas after 5 minutes and brush it with very less oil and again bake for 10 minutes all total 15 minutes and after that the vadas are ready. Keep them aside.

Now in a bowl take water add salt and sugar to it and mix well. Once both dissolves well then add the airfried vadas to it and allow it to soak for 15-20 minutes. While the vadas are soaking in water let's prepare the yoghurt mix for that in a big bowl add yoghurt beat it well then add water to it and mix again. After that add little sugar(optional), salt, pink or black salt, chaat masala, roasted cumin powder to it and mix well. Mix all these ingredients in less quantity.

Now gently press the soaked vadas between your palms so that the water comes out and the vadas won't break and then soak these vadas in yoghurt mix ensuring that it's well covered by the yoghurt mix. Once all done cover it and refrigerate it for 3-4 hours then serve it. For serving put some vadas on a plater sprinkle some chat masala powder, roasted cumin powder and black salt on it. Then add some tamarind chutney some green chutney and some sev on it and serve it or serve it the way you like.
