Found this recipe on a website and adapted it for 1 person. I prepare the recipe in a pot which has a lid and can be transferred from hob to oven, no fuss and less mess

Found this recipe on a website and adapted it for 1 person. I prepare the recipe in a pot which has a lid and can be transferred from hob to oven, no fuss and less mess

Pat the chicken dry in kitchen paper

Dust the chicken with flour and salt and pepper
- 3
Melt the butter in a pan and fry the chicken both sides until they brown about 3 to 4 mins both sides

Set the chicken aside and add the chalots to the pan and keep stirring for 3 mins
- 5
Add the white wine vinegar and stir for 3 mins
- 6
Remove the pan from the heat and add the mustard and cherry tomatoes and stir for 3 minutes

Add the chicken

Cover the pan and place in the oven for 30 min at 180 °C
- 9
Remove lid and cook for another 15 min

I served with pasta but chips, mash, potatoes or rice all work..... enjoy
