Cooking Instructions

Cut bacon or pancetta into large chunks and cook on medium low heat in large skillet until crispy.

Boil a good amount of water for pasta and cook according to package directions. Reserve a cup to a cup and a half of pasta water for sauce.

When bacon is done turn off heat and drain most of the grease but leave a few tbsp for added flavor.

In a bowl add 4 egg yolks and 2 whole eggs and 1 cup of parmesan cheese. Asiago can be used as well.

Take a few spoon fulls of hot pasta water and temper eggs so they wont scramble in pan.

Add pasta to pan with bacon and grease and mix in egg mixture and coat pasta.

Add pasta water until desired consistency. I added about half a cup but could of used a little bit more.

Add salt to taste and add parsley and extra parmesan to top for garnish and enjoy !!!!

***NOTE**** this is safe to eat. The hot pasta and pasta water cooks the eggs enough to be edible.
