Indulge in this vibrant taste of India with this Mango Gazpacho.
Come summer & we yearn for chilled drinks, lassi , aerated water, ice-creams & of course ice- golas & so on & so forth.
But in our house we eagerly wait for summer, when I make Gazpachos, with different summer fruits . This Mango Gazpacho is one such chillecd soup that is liked by my husband c very much & I make it pretty often.
The best thing about Gazpacho is it involves no cooking & it is very filling, also can be served as a quick lunch or dinner.
This is a Spanish / Portugal Soup.

Assemble all the ingredients.Chop the mango & keep aside. Assemble all the ingredients for the topping also.

Blend mangoes& orange juice in a blender till pureed. Add cucumber, capsicum, garlic, onion, lime juice & olive oil & blend with 1 /2 a cup of chilled water. Add more water if you prefer a thinner Gazpacho. Stir in chopped coriander.

Season with salt and pepper.

Chill the Gazpacho for 3 - 4 hours. Serve Gazpacho in individual bowls & top with a mix of mangoes, cucumber & capsicum. Garnish with micro greens if using.

Note. : The flavours mellow down once chilled, so season accordingly.
