Prepare all your vegetables: Wash and slice the zucchini and eggplant. Remove the stems from the tomatoes and cut them into wedges. Thinly slice the onions and press the garlic cloves.

In a Dutch oven, heat olive oil and sauté the onions. Add the garlic pulp. Add thyme, salt, and pepper, and stir. Add the zucchini, tomatoes, and eggplant, and stir again. Add a little water and the tomato sauce, stir, and let simmer on low heat. Stir often.

Serve hot or cold, with quinoa, a green salad, or on its own. Enjoy!
