Thai Banana Egg Pancake (Roti Kluai Khai)

To make the dough: Mix water, sugar, sweetened condensed milk, butter, and half an egg with a pinch of salt. Stir well, then add the flour and knead until smooth. Divide the dough into small balls and soak them completely in oil. After 3 hours, remove them. Beat the remaining 1 1/2 eggs with a pinch of salt, a little sugar, and a bit of sweetened condensed milk. Slice the bananas thinly. For each pancake, use one banana. For three pancakes, slice three bananas.

Take a dough ball and stretch it by hand until thin, or use a rolling pin to roll it out. Place it in a buttered skillet. Add the banana and egg mixture, arranging the bananas in a rectangle for easy folding. Fold the dough over the filling and cook until golden on one side, then flip and cook the other side until golden. Use a spatula to press the pancake while folding. Once done, transfer to a cutting board and cut into bite-sized pieces.

Pour 2 bowls of milk. In one bowl, add 1 tablespoon cocoa powder and mix well. Drizzle both the cocoa milk and plain milk over the pancakes. Enjoy your snack while watching the games!
