This incredible mushroom has many medicinal benefits but also makes an excellent meat replacement. It easily absorbs flavour and has a very meaty texture. Add smoky spices, woody herbs or BBQ rubs if you like.

Slice the mushroom in half. Add some oil to a small pan over a medium high heat. Add the mushroom to the pan and top with another frying pan to apply some pressure

Cook for 1-2 minutes. Pressing down on the top pan occasionally, remove the pan, flip the mushrooms (they should be starting to turn golden) and repeat the process

Remove the pan again, season well, then add the garlic to the pan. Turn the mushrooms twice more until caramelised. Slice and serve
