Steps

Chop Okra / Bhindi and keep aside. Chop potato and onion into medium size cubes.

Assemble all other ingredients

In moderately heated pan add oil, add cumin seeds and allow to crackle then add hing + chopped garlic and sauté for few seconds, then add potatoes and stir fry for 3-4 minutes by adding salt. Then add chopped Bhindi + green chilli + turmeric powder + red chilli powder + coriander powder.
Mix well and gently stir fry under low to medium flame. - 4
Gently stir fry for 5-6 minutes and let Bhindi turn soft (till 80 %)

Then add chopped onion + garam masala, mix well and stir fry for 3-4 minutes. Lower flame, cover and cook for 3-4 minutes, lastly add salt and mix well.

Dish is ready to serve.

Serve with roti / paratha and enjoy.
