Cooking Instructions

Gather all of your ingredients. Preheat the oven for 3 minutes and turn off to provide a warm spot to proof the dough.

In the bowl of a stand mixer, mix together the water and yeast. Let stand for 5 minutes to activate.

Meanwhile, whisk together all the remaining dry ingredients in a separate bowl.

Add the olive oil and dry ingredients to the mixing bowl and stir until combined.

With a dough hook, need on medium-low for 8 minutes. Add some extra flour a little at a time, as needed, to stiffen up the dough.

Turn out the dough on a floured surface and knead for a couple more minutes, incorporating more flour if needed to get the consistency right.

Form dough into a ball and place in an olive oil coated bowl, turning dough to coat all sides. Cover with plastic wrap and place in the warmed oven to rise for 1 hour, or until it has doubled in size.
The dough can also be frozen at this point to enjoy later.

On a lightly floured surface, roll out dough to about a quarter of an inch.

Move to a pan sprayed with baking spray and sprinkled with cornmeal and press out the the edges of the pan. With a fork, poke holes all over the dough, leaving about 1½ inches around the edge.

Bake at 400°F for 8 minutes, or until just beginning to brown.

Please see the post for more information on all-purpose vs. bread flour in pizza dough.²Many commenters have reported using active dry yeast (use the same amount, 2 ¼ teaspoon) with success. Some people have proofed the yeast first with the ¾ cup warm water, which is what I would recommend, while others have just mixed it into the dough as instructed. Both have had success!³Ideally your water should be between 105-115F (40-46C). I usually just use warm tap water but do make sure that your water isn't too hot or it will kill your yeast! This is the result of massive amounts of research and time and taste testing. A pizza dough that can handle high heat (600°+) that a Kamado-Style grill can produce. This dough is relatively quick, tasty and looks good as well.Notes: prepare pizza and immediately place in grill for less puffy crust.
