My version of simple quick curry
My cooking style is always like this, use whatever available in the kitchen 😆
Cooking Instructions

Heat up cooking oil, then stir fry the chopped yellow onion until fragrant

Put in the blended chilli, i use Chilli Boh since fresh chilli is expensive. The chilli paste already has salt on it, so I don't need to put some.
Stir fry until fragrant, then put in the sliced meat.
Continue stir frying until the meat changing color
**During the cooking process, i keep the fire big because i want to keep the chicken breast soft and not overcooked**

Once the meat changing color, put in the santan/ yoghurt. Mine is Santan Sawit

Keep stir frying, add on a bit of water and let it simmer for 2 mins, then off the fire.

We do like Indian food, well myself more so than my wife. So I always am trying to find a recipe that is less than 75 ingredients, about 15 of which I have never heard of, let alone able to find. Plus I need things sort of quick since I work and have to come home and make dinner. A rice bowl once a week really fits the bill for us. So I sort of took a couple recipes, modified for ground meat, and readily available spices in the average American market, and this recipe was born. Quite frankly, the only thing I had to buy that wasn't in my spice cabinet or pantry was the coconut milk. My wife said it needed more tomato paste, I thought it had too much. She said it was too spicy, so I modified the crushed red pepper amount to bring that down. We both agreed the addition of green peas would be wonderful. So next time, 1/2 - 1 cup of peas. I really liked the curry rice bowl that I ate at my favorite udon restaurant a long time ago, but I can't get it anymore, so I decided to make it myself. I adapted a curry recipe from "vege dining", a website I love.It is free of animal derived ingredients and doesn't use a lot of oil, so it's ideal to feed to small children as well.Add richness using sesame paste. You could probably use peanut butter instead. Adjust the amount of spices to taste. Reduce the curry powder for small children. Try to use preservative and MSG-free ketchup and sauce as much as possible.
