Patatas Bravas in Cosori Air Fryer

The other day I made a spicy tomato sauce for some pasta, and I had some left over, so I saved it in the fridge to make these patatas bravas. When I was in the Canary Islands last week, I tried some delicious bravas - of course, the potatoes there are famous.. - and it seemed like they had been boiled a bit before frying (@CocinarParaCuatro can confirm if that's how they're made or not!). I tried making them like that in this recipe, and they turned out very tasty. If you don't have an air fryer, no worries - they will surely be just as delicious baked in the oven (but for longer - 35 minutes at 400°F) or in a pan.

Cooking Instructions

Heat the chili flakes and bay leaf in a pan with a little oil for a couple of minutes. Add the tomatoes and stir over medium heat.

When the tomatoes are a bit softer, add the splash of vermouth. Increase the heat to high and cover the pan for 10 minutes.

Uncover and stir to thicken the liquid released by the tomatoes. You can see before and after in the videos. Add the piquillo peppers to the blender jar.

Add the tomatoes, a splash of oil (thanks @tesa_cuina !!) and blend.

Cut the potatoes into cubes and boil them for the 5 minutes it takes to preheat the air fryer. Drain. Return them to the pot, add a little oil and a pinch of salt.

Shake the pot. Place the potato pieces in the air fryer basket and cook for 14 minutes at 400°F. After 7 minutes, remove the basket, shake, and return it for the remaining 7 minutes. When done, transfer the potatoes to a plate with paper towels to absorb excess oil.

Add the sauce, mix, and they're ready! Delicious homemade patatas bravas inspired by the ones I had in Gran Canaria 😄

Patatas bravas--crispy potatoes served with a spicy, paprika-forward tomato sauce--are standard fare at any tapas restaurant. As simple as they are to make (and they really, really are simple), there's a lot of variation in the method. The recipe below includes my personal preferences.
