Ingredients

  • 5 piecesnutmeg
  • red repper to taste blended
  • 1kilo cowtail meat
  • 2soy seasoning cubes salt to taste
  • 1 tablespoonblack pepper, ground
  • 10 leavesbasil leaves (scent leaves), sliced
  • 3onions
  • 5scotch bonnet
  • 5 pcsgarlic

Steps

  1. 1

    First, prepare the spices. Crack the shells off the nutmeg, then roast the nuts over a flame before grinding it into a fine powder.

  2. 2

    Blend the red pepper, scotch bonnet, onion and garlic.

  3. 3

    Wash the chopped cowtail thoroughly.

  4. 4

    Season with salt and soy seasoning cubes (I use Knorr brand).

  5. 5

    When the meat is tender, add the blended peppers.

  6. 6

    Add the ground spices and 3 cups of water.

  7. 7

    Allow the mixture to boil for about 5 minutes.

  8. 8

    Throw in the sliced basil and stir.

  9. 9

    Taste for salt.

  10. 10

    Allow to boil for 2 more minutes, then turn off the heat.

  11. 11

    Cook until it's tender. (You can use a pressure cooker to cook it faster if you have one.)
