This is a great dish and a complete one. It has everything protein, vitamins, greens.. Kids love it and so do grown-ups. If you have an iranian store nearby, do ask for pre-fried Sabzi for Gormeh Sabzi. This is a quick version of the traditional Gormeh sabzi though no difference in taste.

Cooking Instructions

Wash and pressure cook the meat with salt and peppercorns.

Boil separately kidney beans (known as lobia chitti)

For the healthy version, put meat, cooked beans and pre-fried sabzi (cilantro, fenugreek and other herbs). Gently mix and add water. Do not add oil as the sabzi is fried and has oil. You can add stock of beans and meat that you cooked before instead of water.

Let it simmer.

Crush the dried lemons. Remove the seeds

Lemon and salt should be added just 10 minutes before dishing out.

Slow cook till oil from the sabzi appears on the surface. Serve with boiled rice. Bom apetite.
