Ingredients

Few minutes
1 person, scant half cup
  1. 1cold egg yolk
  2. 1 Tbswarm water
  3. 1/4 tspdry mustard
  4. 1/4 tspseasalt
  5. 1/4 tspfreshly ground white or green pepper
  6. 1 tsplemon juice
  7. 1/2 stickunsalted butter, 4 Tbs, 60 grams, bubbling hot
  8. Equipment: glass measuring cup, glass bowl, hand egg beater
  9. Cost: egg yolk 40 cents, butter 50 cents, other 10 cents, $1 per portion

Cooking Instructions

Few minutes
  1. 1

    Whip egg yolk, water, mustard, salt, pepper, till well mixed. Heat butter in glass measuring cup in microwave till piping hot and bubbling (123 seconds). While whipping, drizzle butter in. Scoop sauce into still warm glass measuring cup, add lemon juice, taste. Keep warm by putting glass bowl in warm water bath. Serve over poached veggies, poached fish, poached eggs. Enjoy.
