Prepare crispy fried chicken by cutting the chicken thigh meat into bite-sized pieces. Mix with salt and ground black pepper, then coat evenly with all-purpose flour.

Fry the flour-coated chicken in hot oil over medium heat until golden and crispy. Remove and drain excess oil. Set aside.

Add a little vegetable oil to a pan. Sauté the garlic until fragrant, then add the mushrooms and pickled mustard greens. Stir in the onion, bell pepper, and fried chicken. Stir until combined.

Season with soy sauce, oyster sauce, and sesame oil. Add the green onions and roasted cashew nuts, stir to combine. Serve on a plate.
