Ingredients

  1. 2 cupsdried beans, Anasazi or Appaloosa
  2. 7-8 cwater
  3. 1/4 colive oil
  4. 1sweet onion, chopped
  5. 1 tbspchopped garlic
  6. 3/4 tspground cumin
  7. 1 tspsea salt

Cooking Instructions

    Rinse and pick any debris out of the dried beans.

    Place in instant pot with water. Cook on high pressure for 40 mins.

  3. 3

    Start natural release of pressure to complete cooking by letting sit in instant pot sealed for 40 mins.

    Release pressure on instant pot.

  5. 5

    Saute onion in olive oil in a dutch oven until very soft. Add garlic and saute 1-2 minutes.

    Add cooked beans and water to Dutch oven. Add salt and cumin. Stir.

  7. 7

    Simmer beans for 30-40 mins to combine flavors. Mash 1/3 part of beans against the side of the pot to thicken beans.

    Make burritos. Wrap in parchment paper and freeze for later.
