Beef in the Slow Cooker

I already have a recipe for beef stew in the slow cooker, but today when I went to make it, I thought, "It has beef, it has carrots, let's add a few more ingredients to support the #tomatoteam and @Lemonia."
So, I made a few changes (also looking at @Rena13's recipe) and the result was a wonderful and aromatic beef dish, reminiscent of pastitsada (just without the wine), which we served with pasta, but it would be equally wonderful with rice or potatoes (fried, of course, for extra indulgence).

Slice the onions and carrots into rings, and the sun-dried tomatoes and garlic into thin slices. Add them all to the slow cooker.

Place the meat on top (either in pieces or as a whole piece, it doesn't matter). Add the spices. Be careful here because dishes in the slow cooker need a bit more spices than we would use in another pot.

Pour the tomato sauce, tomato paste, oil, and water on top. Add the cornstarch. Stir the sauce a little with the vegetables underneath.

Turn on the slow cooker and cover. After about three hours, I opened it and turned the meat and stirred once more. It takes a total of about 6-7 hours depending on the slow cooker and the setting you use. The meat becomes extremely tender and the sauce (with the addition of cornstarch) becomes thick, cohesive, and wonderfully tasty.
