Cut all the vegetables. Cut the potatoes into large chunks and soak them in water for a while to remove excess starch.

Heat oil in a skillet or pot. Once hot, sauté the potatoes and carrots until lightly browned, then remove and set aside.

Add a little more oil and sauté the onion. Add two or three slices of beef and cook with the onion to add flavor.

Once the onion is translucent, return the potatoes and carrots to the pot. Stir to combine, then add enough water to just cover the ingredients. Don’t add too much water.

Add the rest of the sliced beef and shirataki noodles. Season with sugar, mirin, sake, and soy sauce. Stir to combine.

Increase the heat and bring to a boil. Skim off any foam from the surface. Once the foam is gone, reduce the heat, cover with a lid (or a piece of parchment paper with holes), and simmer for about 15 minutes or until the potatoes are tender. Turn off the heat.

Once all the vegetables are cooked, you can serve immediately, but for best flavor, let the stew sit for about 1 hour so the potatoes absorb the sauce. Reheat before serving.
