I cooked this for my husband as he wanted something healthy and tasty. Not a professional cook but something that I got complimented alot on once I cooked it for my family. Very easy to cook. Recommended for people that have not cooked before.

I cooked this for my husband as he wanted something healthy and tasty. Not a professional cook but something that I got complimented alot on once I cooked it for my family. Very easy to cook. Recommended for people that have not cooked before.

Add 3 Tsp of olive oil in to the pan wait till the oil is hot. Once the pan is hot add 6 Crushed garlic and stir till their a light gold colour.

Now add the thinly chopped onions, wait till the onions soften up and add salt to your taste.

Add 2 tbsp of mix curry powder and stir until the mixture has turned soft and mushy.

Slice the 8 carrots thinly and add to the pan and stir.

Let it cook for about 20 mins (*till the carrots soften up). Then add chopped up coriander.

Ready to serve with white rice. Enjoy 🤗
