This dish is so simple and elegant that I couldn't expect anyone to truly fail. These recipes are a guideline, but if followed, I guarantee that you will prefer it to the simple Mayo and Tajin recipe.
The varied serving size for the dish is dependent on how much of the Elote Mayo Base the consumer likes on their Elote.
The Chilli powder and Cotija/Parmesan are unquantified, because it is really up to preference how much should be added.

Ingredients

30 minutes
4-6 servings
  1. Elote Mayo Base
  2. 3/4cup. Mayonnaise
  3. 2 tbsp.Chopped fresh cilantro
  4. 2 tsp.Lime zest
  5. 1 tsp.Lime juice
  6. 2 tsp.Pulverized (or finely minced) garlic
  7. 1 tsp.Ground black pepper
  8. To taste. Salt
  9. Rustic Elote
  10. 4-6 earscorn
  11. Elote Mayo Base
  12. Chilli powder
  13. Cotija cheese (Possible sub: Parmesan)

Cooking Instructions

30 minutes

    Begin heating your grill or broiler

  2. 2

    Combine the Mayo, Cilantro, Lime zest, Lime juice, Garlic, and Black pepper in a small bowl, then salt to taste.

    Fully shuck, and char the ears of corn until desired smokiness is achieved

  4. 4

    (Optional Step), If your Elote are still undercooked, wrap them in tin foil and leave them on as the unit cools down

  5. 5

    Brush your Elote with the Mayo Base (or plain mayo if you prefer), and then dust with chilli powder, and then dust with Cotija (Or Parmesan) cheese.

    Recommend Garnish: Chopped cilantro and minced red onion. Serve hot.
