Combine butter, brown sugar, and white sugar in a large bowl; beat with an electric mixer until smooth and creamy, 3 to 5 minutes. Beat in egg, 1 tablespoon milk, and 1 teaspoon vanilla extract.

Mix oats, flour, cocoa powder, cinnamon, baking soda, baking powder, and salt together in a separate bowl. Beat into the creamed butter mixture on low speed. Fold in chocolate chips using a rubber spatula. Cover the bowl with plastic wrap and refrigerate the dough until firm enough to scoop for at least 1 hour. Preheat the oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.

Scoop small balls of dough onto the lined baking sheets using a small cookie scoop.Bake in the preheated oven until golden, about 10 minutes. Let cookies sit on the baking sheets for 2 minutes. Transfer to a wire rack to cool completely.

Combine cream cheese and vegetable shortening in a bowl; beat with an electric mixer until smooth. Add marshmallow cream, 2 teaspoons milk, and 1/2 teaspoon vanilla extract; mix well. Beat in confectioners' sugar, 1/4 cup at a time, until the filling reaches a thick consistency. Scoop some of the fillings onto the flat side of 1 cookie using the cookie scoop. Press another cookie on top to sandwich the filling. Repeat with remaining cookies and filling.

I went through my pantry and had a can of pumpkin I wanted to use up and made this. However I completely goofy this up when making it because I wasn’t wake and it still turned out fine and good. I didn’t have nuts or raisins . I got up early just to make this for my boys. I didn’t have the right oats so i had rolled Instant ones so I followed the oat and water from the container instead ( did for 6 because I wanted leftovers) and added the rest of the ingredients. Not being awake I added everything… so if you made that mistake it still turns out fine. I have an early bird teen so I ended up getting a bowl and putting some in it and using the microwave to finish heating it up, ( its was just about done anyways) . Because i was skeptical 🤨 i used half a can of pumpkin also wanted to use the other half of the can for something else , I have one more pumpkin thing I wanted to try but only one can so decided to slip it between the two recipes. This is the original recipe i just tweaked it because of what i had…Both teens enjoy this and said its good enough to make again and worth me getting up early for lol 😂. Glad 😀 i made more than I needed, something different other than cereal. family style -

This is so tasty and healthy, I made changes in the fillings, and when I cooked this, the oatmeal came out a bit dry (maybe I made mistake in the way I cooked it), so I added some more milk in it, until I met the consistency that I wanted.
