Granada-Style Ajoblanco

If I'm not mistaken, in other places this is made with almonds, but this is the recipe my grandmother and mother have always made. They're from a beautiful town in Granada called Montefrío. I asked my mom for some fava bean flour so I could make it, since it's not easy to find here; my uncle used to bring it, but since my sister passed away, my mom buys it online so I can keep making it.

Peel the garlic cloves, remove the germ, and crush them with a pinch of salt in a mortar.

Add the flour, mix, and slowly drizzle in olive oil while stirring, as if making aioli, until you get a creamy texture.

Add a splash of water and mix well.

Pour into a saucepan, and gradually add water while stirring until you reach your preferred consistency. At home, we like it thin so we can drink it cold in a glass, like gazpacho.

Adjust the salt, add vinegar to taste, and chill in the refrigerator until ready to serve.
