Boondi Ladoo

First add gram flour and add baking soda to it.

Add 1 cup water and whisk to make a smooth batter without any lumps. The consistency of the batter is important.

Tip 1 : If they become flat, the batter is thin. To correct the consistency, add a bit of gram flour and check by frying a few boondi if too thin.
Tip 2 : If the boondi are thick and if they get tail ends, the batter is thick. Then add a bit of water and then do the same test. Once you get the correct consistency, proceed with the next step of frying the boondi.

Next, mix 2 cups sugar and 3/4 cup water in a pan to make the sugar syrup.

Cook the sugar syrup, stirring frequently until you get a one thread consistency.

Add the boondi to the sugar syrup, cover and simmer for 3 minutes.

After 3 minutes, the sugar syrup will be absorbed. Turn off the stove and cover it for 2 minutes.

Lightly roast melon seeds in a pan and add them to the boondi and pistachio nuts to it. Once everything is mixed together add ghee and cardamom powder to it.

After mixing everything together, if you take it in your hand, the boondi will be well soaked and delicious.

Now the delicious sweet boondi ladoo is ready to eat.
