Roasted Aubergine, Peppers & Tomatoes with Feta

I have recently fallen in love with the Aubergine & am trying to reduce my carbohydrates - so thought layering the baked tomatoes & feta on aubergine would work well. It turned out it did.

I have recently fallen in love with the Aubergine & am trying to reduce my carbohydrates - so thought layering the baked tomatoes & feta on aubergine would work well. It turned out it did.
Steps

Turn the oven on to 200 degrees Celsius (fan)
- 2
Cut the aubergine into rounds, spray with olive oil on both sides and sprinkle with garlic and onion powder. Place on a lined oven tray.

In another oven proof dish put the tomatoes, sliced yellow peppers and onions and sprinkle them with the garlic powder, onion powder & chilli flakes. Place the feta on top and sprinkle with a bit of paprika.

Bake everything for 25-30 minutes.

Put the Aubergine rounds on the plate and top with tomatoes, papers, onion and feta. Add hummus if you wish. Sprinkle with coriander leaves.
