Step 1
Start salted water boiling in large pot to cook the pasta - 2

On low, cook the garlic, shallot, spinach and olive oil for 5-10 minutes covered. Stir occasionally. - 3
Step 3
Add the cherry tomatoes and crushed red pepper. Cook for 3-5 minutes, stirring occasionally. - 4
Step 4
Add the water and bring to a simmer, uncovered. - 5
Step 5
Add the drained pasta, cream cheese, Parmesan and pine nuts. Stir to combine. - 6
Step 6
Add the mozzarella cheese, lemon juice, salt and pepper. Stir to combine.Let sit covered 5 minutes for flavors to settle and cheese to melt. Stir thoroughly and serve.
