Ingredients

  2. 1 lbpasta
  3. Salted water
  4. Step 2
  5. 1/4 colive oil
  6. 1 cshredded spinach (frozen)
  7. 1shallot, thinly diced
  8. 4garlic cloves, thinly sliced
  9. Pinchsalt

  11. 1 lbcherry tomatoes, halved
  12. 1 tcrushed red pepper flakes
  13. Step 4
  14. 1 1/4 cwater
  15. Step 5
  16. 1/2 cParmesan cheese
  17. 2 ozcream cheese
  18. 1/3 cpine nuts, toasted
  19. Step 6
  20. 8 ozfresh mozzarella
  21. 1 tlemon juice

Cooking Instructions

    Step 1
    Start salted water boiling in large pot to cook the pasta

    Step 2
    On low, cook the garlic, shallot, spinach and olive oil for 5-10 minutes covered. Stir occasionally.

    Add the cherry tomatoes and crushed red pepper. Cook for 3-5 minutes, stirring occasionally.

    Add the water and bring to a simmer, uncovered.

    Add the drained pasta, cream cheese, Parmesan and pine nuts. Stir to combine.

    Step 6
    Add the mozzarella cheese, lemon juice, salt and pepper. Stir to combine.

    Let sit covered 5 minutes for flavors to settle and cheese to melt. Stir thoroughly and serve.
